Habichuelas (beans)






First time i made this was almost 10 yrs ago. I must say i'm getting better every time. Kids loves it. In this recipe i made it with pink beans. You can make it with red kidney beans or pinto beans.

Ingredients:
- 2 tbsp of oil
- 1/2 cup of chopped onion
- 1/2 cup of chopped green peppers
- 2 cloves of garlic
- 2 cans of goya beans (pink, red kidney, pinto)
- 1/2 cup of tomato sauce
- 1/2 tsp of oregano
- 3/4 cup of water
- 2 packet of goya sazon
Salt n pepper to taste




Directions:

- heat oil in a medium pot

- add the garlic cooked it until a little brown
















- then add the onion and green peppers, cook it for 5-10 minutes
















- add the beans, tomato sauce, water, sazon
















- then add the remaining ingredients cook for 10 minutes.



serve it over hot white rice, and enjoy. 

TIPS : FLAX SEED

hi all,

as you all know i always try to find other things to substitute for eggs in my recipe. due to allergies in my family.
recently i tried a few recipes that required eggs, and instead of eggs i have been using flax seed. and it works just perfect. everything came out the same as it wold be with eggs. this is a big news for me. now i could cook more recipe and makes more new dishes without changing my sons diet. im very pleased to say that this was a great finding. i hope that i could help other moms out there who have a question and been dealing with food allergies.

Stir fry Chinese water spinach (kangkung)



hi there, this is one of my favorite asian stir fry dish.
there are many ways to make this dish. my recipe is very simple. you could find all the ingredients almost anywhere.




ingredients:

- Chinese water spinach
- 1 shalots
- 1 tsp mince garlic
- 1 tbsp oyster sauce
- 6 thai chilly peppers (this is optional, i like mine a little spicy)
- salt
- black pepper
- 2 tbsp oil

directions:

- heat up wok pan on medium high heat, then take the shallots, garlic and the chilly pepper in food processor just to blend it all.

- then add the mixture onto the wok for 5 to 6 minutes



- cut up the spinach. and separate the leaves from the stem. 

- then you want to add the spinach onto the wok pan. 


- cook it for about 5 - 10 minutes. until the spinach is cook well.
- then add the oyster sauce into the pan 

- add about 4 oz. of water.

- then add the salt and pepper to taste. 

serve it with white rice.
